Today I continued with the effort of carving up one of my pacific giant pumpkins.
It's hard as a boulder.
I think even a chain saw would get stuck in its meat. The thin covering is almost impenetrable.
I carved out enough, probably about 5 cups?
...for a nice soup using vegetable broth and coconut oil, &
Onion...1/2
Cauliflower...6 florets
Carrot...1 fat
Celery..2 stalks
Curry powder
Pepper flakes
S&P
Cooking veggies in vegetable broth with coconut oil...
Purée until smooth
Garnish will a dollop of strawberry jam or yogurt or sour cream.
